Homemade caramelli cookie cups

Homemade cookie cups loaded with gooey salted caramel and sealed with a thick chocolate top… honestly ridiculous.
Like a pods, but pod pies, way better. 🤤


Cookie Dough
2¼ cups plain flour
1 tsp baking soda
½ tsp salt
¾ cup butter, softened
2 eggs
1½ tsp vanilla
¾ cup brown sugar

Salted Caramel
1 cup caster sugar
100 g unsalted butter, cubed
½ cup thickened cream
1 tsp salt


How to make them
Preheat oven to 180°C.

Cream butter and sugar until light and fluffy. Mix in eggs and vanilla, then stir through flour, baking soda and salt until a soft dough forms.

Press dough into large muffin tins to make thick cookie cups. Bake 10–15 minutes until lightly golden. While warm, press the centres down to shape the cups, then chill until firm.

For the caramel, melt sugar over medium heat until smooth and amber. Carefully whisk in butter, then slowly pour in cream while stirring. Add salt and let cool.

Fill each cookie cup with caramel and refrigerate about 1 hour to set.

Top with melted chocolate, smoothing it over the surface. Chill overnight for the best texture… if you can wait that long.
